If you are into Keto, this is the Bread recipe book for you (Verified Purchase)

The recipes are easy to make and are delicious. If you like Yeast bread, her recipes are spot on. If you want to toast Keto bread, you need a toaster over to do the job correctly. This allows you to toast the edges of the bread very dark and crispy giving it a nutty flavor that is great.

Also, I refrigerate my bread and a toaster oven allows you to toast it around the edges and toasts the center of the bread to perfection. You will want to experiment with toasting until you find just the right amount of time for you. Hope you enjoy it.

Binding not user friendly (Verified Purchase)

I have enjoyed this cookbook for its recipes. The way the book is bound makes using it VERY difficult. Ring binder would be a more user friendly.

3. 5 out of 5 stars

Excellent and easy

This book is excellent for making breads. I love the banana bread especially. I’m anxious to try the others— they all look very easy and she gives lots of tips. I’m wondering how her dessert book is. I can’t use erythritol because it gives me headaches so I’m on the hunt for a good, low carb dessert book that doesn’t use erythritol.

Her creations are not just healthy; they are delicious and easy to make, aiming to achieve optimal health outcomes. Kelley’s journey in nutritional biochemistry has led to the discovery of powerful, healing compounds in foods, helping countless people improve their nutrition and overall well-being.

7 Reasons Why Say No To Traditional Breads?

1. The Hidden Addiction Inside Your Bread

Traditional bread is not just a staple food; it harbors a hidden risk due to compounds called gluteomorphins. These substances engage opioid receptors in the brain, similar to drugs like morphine and heroin. This biochemical interaction can create an addiction-like dependence on bread, leading to a continuous cycle of cravings and consumption.

2. Wheat’s Blood Sugar Spike

Wheat, especially whole wheat, is notorious for causing rapid spikes in blood sugar and insulin levels, more than many sugary foods. This is due to the high content of amylopectin A in wheat, which transforms rapidly into glucose upon consumption.

Regular exposure to these spikes significantly increases the risk of developing chronic diseases such as cancer, Alzheimer’s, heart disease, and diabetes. It also accelerates physical aging, contributing to conditions like fatty liver and macular degeneration.

3. The Silent Gut Inflammation

One of the most deceptive aspects of bread consumption is its ability to cause silent gut inflammation. Many people consume bread without noticeable digestive distress and thus believe it’s harmless. However, nearly half of the individuals with severe wheat sensitivity, like celiac disease, show no immediate digestive symptoms. This means that bread can cause significant, unnoticed damage to the gut, setting the stage for serious health issues.

4. Toxic Proteins in Wheat

Modern wheat can produce thousands of unique proteins, many of which can trigger inflammatory responses. Among these, lectins, particularly wheat germ agglutinin (WGA), are the most dangerous.

These proteins are natural toxins that plants use for defense and can cause long-term health problems in humans. Lectins are known to attack the gut, disrupt hormonal functions, and are linked to various chronic illnesses.

5. You Start Gaining Weight

Bread’s impact on weight is not just about calories; it’s a hormonal issue. Components in wheat, like WGA, mimic insulin, leading to increased fat storage and decreased fat burning capacity.

Furthermore, WGA disrupts the function of leptin, a key hormone that regulates appetite and satiety. This dual impact makes it extremely difficult to lose weight while consuming traditional bread.

6. The Danger of Leaky Gut Syndrome

Wheat consumption can lead to leaky gut syndrome, where the integrity of the gut barrier is compromised. This allows harmful substances like bacteria, viruses, and undigested food particles to seep into the bloodstream, causing widespread inflammation and immune responses. Leaky gut is a critical factor in the development of autoimmune diseases and a host of other health issues.

7. Myth of Gluten-Free Products

Gluten-free products, often perceived as healthier alternatives, can be misleading. Many of these products contain ingredients that are as harmful, or even more so, than wheat.

They are packed with lectins, high-glycemic flours, and starches that can cause blood sugar levels to soar, leading to weight gain and the same health issues associated with traditional bread. This makes many gluten-free options a poor choice for those seeking healthier alternatives to wheat

Frequently Asked Questions (FAQs)

Q. What are the dietary considerations for the ingredients used in Keto Breads?

A. In “Keto Breads,” most recipes are adaptable to be dairy-free, using substitutes like coconut oil instead of butter. However, a few recipes do require specific dairy products like cheese or sour cream.

For those avoiding eggs, the book includes a section on egg substitutes, with the final products having a slightly different texture but still tasty. The breads are crafted to avoid an “eggy” taste, which is a common issue in grain-free breads.

About half the recipes are coconut-free, and for those that do include coconut, substitutions like butter are possible. Almond flour is frequently used, but can be replaced with sunflower seed or hazelnut flour for those with allergies.

Yeast isn’t necessary for most recipes, but is optional for a few to enhance rise and flavor. Lastly, the recipes are free from gums like guar and xanthan, preventing potential digestive discomfort.

Q. What Ingredients are Needed for Keto Breads and Are They Truly Ketogenic?

A. Keto Breads require ingredients like almond and coconut flours, eggs, healthy fats like butter and olive oil, and various herbs and seasonings. For those with allergies, there are alternative options provided.

The yeast breads in the book call for a small amount of sugar or starch, but this is optional and used only to activate the yeast. Rest assured, every bread in the book is ketogenic. They are low in carbohydrates and fit the ketogenic macronutrient ratio.

For instance, the Keto French Bread, even with an optional small amount of maple syrup for the yeast, contains just 5g of carbs per serving, aligning with the ketogenic diet’s requirements.

Q. Can I Use a Bread Machine, and How Do I Store These Breads?

A. Regarding using a bread machine for Keto Breads, it’s not recommended. These recipes are designed to be simple, involving just mixing ingredients, shaping or dropping the dough into a pan, and baking. Gluten-free bread doesn’t require kneading, which is a primary function of bread machines.

As for storage, these preservative-free breads won’t last as long as commercial bread. However, if stored in an airtight container in the fridge, they can last up to 10 days. Freezing is also an option for longer storage. After the bread has cooled, wrap it in plastic freezer wrap, either as whole loaves, rolls, or slices, and store in a zip-top freezer bag to prevent frost and freezer burn.

Finally, regarding altitude adjustments, Keto Breads have been successfully tested in different altitudes, from the Wasatch mountains of Utah to sea level in Florida, without any noticeable differences in results. There’s no need to alter the recipes based on your altitude.

Q. What Do I Need to Know About the Making and Nutritional Content of Keto Breads?

A. Each “Keto Breads” recipe includes a detailed nutritional analysis, covering 19 different measures such as calories, carbs, fat, protein, and important minerals. Designed to be low in carbs, they contain 1g to 3g net carbs per serving, making them suitable for a ketogenic diet.

The cost of making these breads is relatively low, under $0.75 per serving, which is economical compared to health-harming bakery breads. For preparation, you don’t need specialized equipment; a whisk or hand mixer, mixing bowls, spoons, baking sheets, loaf pans, measuring cups, a pizza stone or cast iron pan, and a kitchen scale will suffice.

Glass and metal baking dishes can be used, with each having its specific benefits and considerations.
